Here’s an easy yet yummy recipe that I made yesterday and it turned out so well, even the kids thought it was good! In fact, we ate it all too soon for me to even get a picture of it. I’m sure I’ll make it again soon and I think you’ll like it too… 😋
The cumin in it is grounding – which is perfect for calming anxious minds – and honestly, I think cauliflower is an unsung hero in the vegetable world.
It’s easy to overlook it yet cauliflower is a nutritional powerhouse loaded with vitamins and nutrients, including lots of Vitamin C which also could come in handy right now.
Cumin Cauliflower Soup
1 whole cauliflower
1/2 yellow onion, diced
2 tsp cumin seeds (or more to taste)
1 1/2 – 2 cups water or broth (I used homemade beef broth made from soup bones)
Salt and Pepper to taste
- Add onion and whole cumin seeds to 1 Tbl olive oil in a stock pot and cook until the onions are soft and translucent.
- Chop cauliflower roughly and add to pot. To that add water/broth. Bring to a boil and cook until the cauliflower are soft.
- Blend with an immersion blender or blend in a blender for extra smooth soup. Pour back into the pan and reheat if necessary.
- Add salt and pepper to taste. Top with fresh cilantro.
